I know what you’re going to say…peanut butter in soup? But yes, it really works and tastes amazing! The first time I tried peanut soup I was hooked, and after tweaking the ingredients to my liking, this recipe is my peanutty gift to you. Spicy, sweet, and packed full of oomph, I’m sure you’ll love it just as much as me. Your heat-o-meter is the deciding factor on how spicy you make it, so if you want crank up the heat with more chilli flakes or fresh chillies, go for it.  

Did you know that a peanut is actually a legume, like beans and peas, and not really a nut? They’re a fantastic source of protein and contain the important B-complex group of vitamins like niacin, riboflavin, thiamin, vitamin B6 and folates. Niacin can contribute to brain health and blood flow to the brain, so if you want to be brainy, eat peanuts!

Tip: Grating tomatoes is a great way to use them in sauces and soups. Just hold the stem end and slice off the other end. Then grate on a regular cheese grater into a bowl. The flesh and juice will come away easily and end up in the bowl, and the skin will be left in your hand – easy peasy!

Ingredients: 

  • 3 large spring onions – sliced
  • 2 cloves of garlic – crushed and chopped
  • 2 pints (approx. 5 cups) of gluten free chicken stock/vegetable stock/water
  • 1 large carrot – grated
  • 1 sweet potato – peeled and diced
  • 1 yellow pepper – diced
  • 1 red pepper – diced
  • ½ – 1 cup of gluten free crunchy peanut butter (depending on taste)
  • 2 large tomatoes – grated
  • 2 tablespoons of tomato puree
  • 1 inch piece of fresh root ginger – sliced finely
  • ½ – 1 teaspoon of chilli flakes
  • 1 tablespoon of paprika
  • Salt and pepper to taste
  • Olive oil for frying

Garnish: 

  • Chopped peanuts

Method:

  1. Fry the onions and peppers until soft.
  2. Add the stock and other ingredients and bring to the boil, then simmer for 35 – 45 minutes.
  3. Blitz in a blender or with a hand blender until smooth. Top with the chopped peanuts and serve.

 Serves 4 – 6

* Vegetarian/vegan option – use vegetable stock

* Dairy free
