It's Shrove Tuesday today, or Pancake Day, but if coeliac, or you're following a wheat free/gluten free diet, it doesn't mean you have to miss out on all the yummy fun! Here's my recipe for pancakes, taken from my gluten free/wheat free Turkish cookbook A Gluten Free Taste of Turkey...



With this recipe you never have to miss out on Pancake Day again! There are so many yummy serving suggestions to go with these pancakes that I’m drooling just typing this! For a bit of variety you can add vanilla essence, ground nutmeg, cinnamon, or chocolate chips to the batter. Here are some of my favourite toppings:

Hot chocolate sauce and crushed hazelnuts

Strawberries and cream

Good old fashioned lemon and sugar

Carob syrup and vanilla ice cream

Honey and crushed walnuts

Tip: If you want a thinner, more crepe-like pancake, add more milk



·          1½ cups of rice flour

·          1 cup of milk

·          1 teaspoon of gluten free baking powder

·          2 eggs – beaten

·          Butter for frying


1.      Put the flour and baking powder into a large jug and mix.

2.      Add the eggs and milk, whisking until the flour has dissolved and it’s a batter consistency.

3.      Add a knob of butter to a non-stick frying pan and warm it over a medium heat.

4.      Pour in a batch of batter how much depends on whether you want a thicker pancake or thin crepe). Cook over a medium heat for a couple of minutes on each side, or until they’re golden brown. Repeat for the next batch of batter.

Makes 6 – 8 pancakes, depending on size and thickness
